These baked tomatoes with feta are so easy to make, absolutely delicious, and can be made on the BBQ, in the oven, or in the air fryer.

Tomatoes and cheese make a fantastic fast side dish or appetizer and are also simple to meal prep ahead of time.

What’s in These Cheesy Grilled Tomatoes?

We’re rocking:

  • Feta
  • Fresh grape tomatoes
  • Minced garlic
  • Fresh or dried thyme
  • Fresh lemon zest
  • a little olive oil
  • And if you love yourself, you’re going to drizzle some balsamic glaze over the top when all is said and done.

As feta is already a fairly salty cheese, I would caution against adding additional salt until you’ve tasted the cheese mixture.

Use any leftover feta to make a batch of Whipped Feta Dip or Greek Fries. Use any leftover lemon zest for Lemon Garlic Pasta.

How to Meal Prep Baked Tomatoes With Feta

If you are planning to stuff and then grill/bake these within two hours, you can pop the stuffed tomatoes in the fridge. Any longer than that and I recommend you make the cheese mixture and store it separately in the fridge and tomatoes on the counter.

Tomatoes are happiest at room temperature and putting them in the fridge for an extended period of time results in a mushy tomato. Slice the tomatoes, cover, and store them at room temperature for up to four hours. Stuff just prior to serving.

You can also use prepped and frozen minced garlic or garlic paste to make your life easier and your prep time faster.

What kind of tomatoes work best in this dish? Using paste-style tomatoes like grape, plum, or Roma will help the tomato hold its shape during the grilling process.

How Do You Bake Tomatoes in the Oven?

Like a boss, that’s how! Instead of using the traditional oven function, you’re going to use your broiler to grill tomatoes in the oven.

You’ll need a baking sheet to make this happen. Place your oven rack on the highest rung in the oven so that it is as close to the broiler element at the top as possible.

When given a choice, I prefer these tomatoes cooked on the grill or in my air fryer. They get soft and seared on the bottom creating a softer tomato base. The broiler cooks from the top so the tomato stays a bit firm.

Pro Tips/Recipe Notes

  • Really mush up the cheese with the fork when mixing. Feta is pretty chunky and you want the stuffing to be fairly consistent in texture.
  • A serrated bread or cheese knife makes the cleanest cuts for slicing the tomatoes in half.
  • If you’d like larger servings, use Roma tomatoes.
  • If you use a BBQ, a grill basket is going to make your life easier.

Grilled Tomatoes With Cheese

Ingredients 

Instructions 

  • Cut the tomatoes in half horizontally, and remove the seeds with your thumb or a small spoon.
    10 oz tomatoes
  • Combine cheese, garlic, thyme, olive oil, and lemon zest and mix with a fork.
    1/2 cup feta, 1 tsp fresh thyme, 1 clove garlic, 1/2 tsp lemon zest, 1 tsp olive oil, salt & pepper to taste
  • Place a little bit of cheese in each hollowed out tomato.

Air Fryer Tomatoes Instructions

  • Preheat the air fryer at 350F for 3 minutes.
  • Place the stuffed tomatoes in the basket and bake at 350F for 4 minutes.
  • Remove from the air fryer and drizzle with balsamic vinegar reduction before serving.
    1 tsp balsamic vinegar

Oven-Baked Tomatoes Instructions

  • Place the stuffed tomatoes on a baking sheet.
  • Set the oven to broil. If you get a choice between "lo" and "high" broil, choose high.
  • Broil for 3-5 minutes. Watch closely because the broiler works fast. Remove from the oven when the cheese is melty and lightly browned.

Grilled Tomatoes Instructions

  • Transfer stuffed tomatoes to a preheated grill basket that has been sprayed with cooking spray or brushed with olive oil.
  • Grill on medium heat until the cheese is melty and lightly browned (~10-15 minutes).

  1. I made these for a family BBQ, they were gone in minutes! I wasn’t sure on the 10oz of tomatoes do I made 10 large romas and had 1.5 cups of the feta mixture. I ended up with too much feta but we used it as a dip for tortilla chips. I will absolutely make these tomatoes again!5 stars

I am obsessed with anything Feta and tomatoes so it was a given that I was going to love this recipe, my husband on the other hand thinks that outside of extra hot salsa tomatoes are the grossest thing ever! As I was making these he made all kids of faces, but guess who housed two of them before they even stopped sizzling from the grill!! I will definitely be making these again!! 5 stars
