My aunt made me a version of this salad almost 10 years ago when I was staying with her for a few nights. I was instantly hooked and have made iterations of it ever since.
10 Minute Asian Noodle Salad
8 oz soba noodles
3 stalks of celery, sliced thinly
4 green onions, sliced into small pieces
1 tbsp sesame seeds
2 tbsp soy sauce*
1 tbsp and 1 tsp rice vinegar*
1 tsp sesame oil*
1/4 tsp sambal oelek
*if you are making this to serve the next day, increase the soy sauce by 1 tbsp, the rice vinegar by 1 tsp, and the sesame oil by 1/2 tsp.
1) Bring a pot of water to a rolling boil, and add the soba noodles. Set the timer for 6 minutes.
2) While the noodles are cooking, slice up the celery and green onions. Toss in a bowl with the sesame seeds, and the liquids.

3) Pour the cooked noodles in a strainer, and instantly blast with cold water until the noodles have cooled.
4) Add the noodles to the veggies and sauce in the bowl, and toss to coat
The beauty of this dish is that you can add so much to it to suit your needs. Shrimp, BBQ pork, shredded cabbage, snap peas, or peppers (if you hate yourself and like those disgusting things) are all great options!
It keeps beautifully in the fridge for up to three days and can be served cold or hot.
