This homemade sugar-free coffee creamer can be made in 10 minutes, is versatile, and can be frozen for those occasional coffee drinkers.
I used to drink Mountain Dew like it was about to be made illegal. My boss and I kept our office mini fridge stocked with them, and it wasn’t unusual to see five or six cans in the recycling bin at the end of the day. I eventually stopped drinking it, and pretty much cut out caffeine all together. When we moved to Los Angeles, Troy was away on a television shoot, and I was home alone. I had a hankering for a bean and cheese burrito from Taco Bell, and grabbed one along with a large Mountain Dew. Just typing that made me realize how very much my tastes have changed.
It was within 40 minutes that I was calling Troy on the set telling him I was either having a heart attack, or an anxiety attack, and chances are I was dying. After freaking out on the phone, my eyes landed on the Mountain Dew cup. I said “oh, I’m fine, nevermind” and hung up on Troy. As you can imagine, I avoided most caffeine after that.
Last summer I discovered I enjoyed decaf cold brew during the summer. I would drink it with Silk Chocolate Cashew milk, which is freaking delicious. However, it is such popular item at my local grocery store, that it is often sold out. With the hot weather starting again, I have been looking forward to a nice icy glass of cold brew in the mornings. But, since I am a child when it comes to coffee, I need flavoring to choke it down. And to make sure I don’t start my day buzzed with sugar, I decided that a homemade sugar-free coffee creamer was just the ticket.
Homemade Sugar-Free Coffee Creamer
A homemade sugar-free coffee creamer naturally sweetened and made with three ingredients. If you use it in small amounts, it can be frozen to make sure it stays fresh.
- 2 cups heavy cream use a brand that is at least 40% milk fat
- 2 tsp pure vanilla extract
- 7 dates, pitted
Place all three ingredients in a small saucepan, and heat on medium for 15 minutes, stirring often.
Transfer to a high-powered blender (like a Vitamix), and blend until the dates are fully incorporated in to the mixture. If you have a conventional blender, blend on high for 2-3 minutes. Then using a metal sieve, a piece of cheesecloth, or even a colander fitted with a tea towel (or paper towel), strain the mixture to remove any date particles that may remain.
Transfer the finished creamer to an air-tight container (a mason jar or old salad dressing jar would be great), and make note of the cream's expiration date. If you won't use the creamer before that date, freeze in ice cube trays. Most ice cube trays have 2 tbsp portions.
This homemade sugar-free coffee creamer can be extremely versatile, and adapted to your tastes.
- Almond flavored: Add almond extract (yum) instead of the vanilla.
- Hazelnut: replace the vanilla with hazelnut extract.
- Chocolate hazelnut (hold me): hazelnut extract and 1 tbsp dark cocoa powder.
- Cinnamon roll creamer: add 2 tsp of ground cinnamon along with the vanilla extract.
- Chocolate mint: 1 tbsp dark cocoa powder, and 1/2 tsp mint extract.
