The ideas for posts and recipes come from the most interesting of circumstances. Some are born out of a need for comfort and distraction, and others from an abundance of fresh produce. Still others are from hilarious situations like when your friend calls you from a trip to let you know that her hotel has free margaritas. And then proceeds to tell you all about a restaurant by her office that offers a delicious sandwich with turkey, brie, and mustard on apple slices. My interest was piqued, and I became excited when I realized I had most everything in my fridge. Without turkey, thinly sliced ham would have to do. And a delightful lunch was born.
Apple, Brie, and Ham Stackers
These delicious and crisp sandwich stackers are the perfect gluten-free summery treat!
- 1 apple
- Dijon mustard
- 3-4 tbsp brie
- 2 slices ham
Cut the top and bottom off of an apple. Cut it in half around the "fat" middle (not stem to blossom end). Using a paring knife, carefully remove the core from each half. Slice the apples thinly. I found that using a bread knife made for the most uniform slices. On a flat surface, arrange the slices in pairs.
Put a smear of mustard on one apple in each "stacker" pair. Top with half of a slice of ham, some brie, and cap with a slice of apple.
Place in a toaster/convection oven, and toast on a low setting for about two minutes.
This makes the perfect summery lunch since it comes together quickly and without the use of an oven to heat up the kitchen. It has the exact ratio of crunchy and creamy to delight your taste buds. It can easily be scaled up to serve more people, but can also be a decadent solo treat just for you.
