Last week I went to bed in the summer and woke up in fall. It was glorious. We had three days of rain, and our grass has no idea what in the world is going on. Our grass usually dies by July and then pops right back up in October. It’s a thing. I don’t know why anyone actually waters their lawn. Then it grows and you just have to mow it. No thanks.
It was so nice to walk with Bennett and not just be drenched in sweat by the end of it. I used the oven without hating everyone in the world for wanting food that was baked. Hot tea made multiple appearances, but I really wanted spicy cocoa on the daily. But I am holding out because I’m on an “only one sweet per day” kick and it is really working well for me.
And of course, now that I am all in fall mode, it is supposed to be in the high 60’s and low to mid 70’s this coming week. Sweaters and boots will need to remain in the closet for a few more days. I’m coming for you. We’re just not there yet.
Sorry anti-tofu people, I made another delicious tofu dish this week.
The air-fryer made another appearance and made that tofu super crispy. I tossed it with stir-fried sweet onions and celery and tossed with a homemade General Tso sauce. I wonder what kind of uniform General Tso would have worn if he weren’t a fictional character. Would he have been formal like Captain Crunch, or more laid back like Captain Kangaroo? Would he wear his medals every day, or save those for special occasions? Does he like to be saluted, or is he more demure?
I got a message from a reader on Instagram asking how I was liking the air fryer. I told her I loved it, and she asked if I would do a pros/cons list on the blog. So that should be coming up in the next few weeks. Also, I love when readers come up with blog topics for me. It allows me to be mentally lazy when I need a brain break. So if you all could just go ahead and create an editorial calendar for me, I would greatly appreciate it. 😉
Who had the best thrift store find ever this week? :raises hand: ME!!!!!
Can you even? Can you even deal with all that awesomeness for only $3? I told Troy I had a present for him and gave him the Indiana Jones glass. He was beyond thrilled. Apparently, the Indy glass was from Taco Bell, circa 1986. Everything about my childhood was summed up in those three glasses. There were multiple Muppet glasses left on the shelves, as well as a giant Top Gun beer glass. Someone else can be Ice Man’s wingman. Take me to bed Goose, or lose me forever. RIP.
Meal plan time! On Tuesdays and Thursdays, Jack and my nephew have soccer practice. Same time, different locations. My sister was picking up my nephew and they were eating Subway in the parking lot where his practice is. Once I found that out, I was like “oh hellllll no”. So we’re trying to do a thing where we eat together on those nights.
Jack also started playing in a (free) lacrosse club after school on Tuesdays, so this week my sis and nephew will be camped out eating at our house, while I’m shoving food in Jack’s mouth in the car between lacrosse and soccer.
Monday:: A chicken pot pie in the crockpot. I have an old recipe that I posted years ago, and I’d like to update it and take new photos. Thus, I’m making it and we’re eating it. A big ass salad on the side. And the pot pie is full of veggies, which makes this meal loaded with veg.
Tuesday:: Paninis, salad
Wednesday:: Troy and Jack have an event at school and will be served pizza. Bennett and I will have leftovers.
Thursday:: Troy’s amazing burgers, fries, and salad.
Friday:: Popcorn, leftovers, and movie night.
Saturday:: Dinner out with some friends. Trying a new BBQ place.
Sunday:: Family dinner
